And the "kelp" halibut he mention may directly translated from its Japanese "大鮃昆布オヒョウ", which refer to the prep method of halibut -- Soak sake in a paper towel to evenly moisten the surface of the kelp which help bring out the umami of kelp and suppressing the odor of halibut. <br />Put a single layer of halibut between layer of kelp. <br />Saran wrap the kelp tightly and put weight on it for 3 to 4 hours. The "kelp" halibut able taste different than regular one.
