Following the completion of our Alinea × The Maybourne experience, we moseyed on over to The Whisky Bar, which as the name would imply, is the hotel's whisky- (and cigar-) focused bar.

The lounge opened in September 2021, taking over the former second floor home of Ten Pound Bar, a similar sort of spot from the Montage days. Decor-wise, there have been some tweaks, but not too much has changed. Pictured above is the main indoor space, but there's outdoor seating offered as well.

Highball

We opted to commence with a round of cocktails, and this first one certainly made for a fitting start thanks to its dry, refreshing, oaky, generally astringent character, perked up by pricks of citrus.

Mighty Mac

Next up was an old fashioned variation, one that I found particularly thick on the tongue, while flavors seemed to highlight the woodsier qualities of the whisky, supported by a cast of bitter, sweet, spicy, and herby notes.

Penicillin
Penicillin [$45.00] | Dalmore 12 yr. Lemon. Honey. Ginger.
Here we have the prototypical "modern classic" cocktail, but ostensibly made without the usual Islay single malt. Thus, the drink wasn't as smoky as it usually is, but was otherwise pretty textbook, its mélange of sour, sweet, and spicy nuances certainly making sense with the Dalmore's weightier sensations.

Vieux Carre

Last up was the New Orleans cocktail staple that is the Vieux Carré. What struck me first with this one was the drink's distinctly fruity qualities, which was only further emphasized by that maraschino cherry. At the same time, the woodier aspects of the spirits were also clearly conveyed, while the expected bitter, herbaceous notes were also all there. My pick of the quartet.

We ended our evening with a tasting flight of Irish whiskies. Left to right, we had:
  • Midleton Dair Ghaelach – This nose here was all about dusty chocolate, undergirded by traces of honey and fruit salad. On the palate, I got a large dosing of orchard fruits, joined by some rather prickly spices and hints of cacao.
  • Red Spot 15yr – Our second whiskey had a somewhat muted bouquet, one composed mostly of ripe pome fruit and oak. Taste-wise, I found a sweetness that I immediately likened to crème brûlée, with some spicier, woodsier components making themselves known toward the back end.
  • Redbreast 27yr – Whiffs here brought a bevy of red fruit, I'm assuming from the spirit's aging in ruby port casks--quite inviting. Taking a sip, I detected loads more of that fruit, but more concentrated this time around, assisted by nutty, funky, and oaky notes from the sherry and bourbon barrels utilized. My favorite of the threesome.
